A MURKY CLOUD HAS APPEARED IN MY BOTTLE OF BIRCH SAP, IS THIS NORMAL?
This murky cloud is completely natural and arises as the result of fermentation.
Fermentation :
This is completely normal and means that bacteria are developing. Over time, the sap turns cloudy, grows whiter and its flavour becomes markedly more acidic.
Freezing :
If you have an especially abundant harvest, you can freeze some sap. Freezing can alter the sap’s physical appearance and can also make it turn cloudy.
Disinfecting the equipment :
To prevent fermentation happening too quickly and protect the trees, remember to clean your equipment with white vinegar or bicarbonate of soda.
